Sounds simple, but there are a few things that need to be considered. Tea makers are the ideal helpers, especially for delicate teas. Green tea, for example, should not be prepared in boiling hot water, while black tea is much more temperature-resistant. The temperature you need to set your tea maker to can be found on the tea packaging.

Classic methods

More about the ideal water temperature
If the tea is boiled too hot, most of the valuable and volatile flavours evaporate and the tea tastes bland or, depending on the variety, bitter. If you don't have the tea packaging with the temperature information to hand, the following rules apply:
- Black tea: Approx. 95°C water temperature directly after boiling.
- Green and white teas: Approx. 80-70°C water temperature or 1-4 minutes after boiling.
- Green, Japanese teas: Approx. 60°C water temperature or 8-9 minutes after boiling. -
These guide values apply to a volume of approx. 1-1.5 litres of water. The smaller the amount of water, the faster the water cools down.
The right brewing time
Basically, the following applies: The more tea leaves, the shorter the brewing time. The hotter the water, the shorter the infusion time. The more broken the tea leaves, the stronger the flavour and the shorter the infusion time.

Just leave your favourite tea to infuse overnight in cold water in the fridge. This prevents the tea from darkening in colour and becoming bitter.
Storing tea correctly
When exposed to light, moisture and odours, high-quality tea loses its special flavour very quickly, which is why it is important to store it correctly. Tea should be stored in a dark, dry and cool place in tightly sealed tins.
