The days are getting longer, the temperatures are getting warmer, and we can pick strawberries again. Yes, we love summer!

With this fresh strawberry and lemon syrup, you can put the sunshine in a bottle.

Served with chilled sparkling water and garnished with lime, this syrup is simply fantastic! However, it's just as good with a little champagne or sparkling wine.

For anyone who has never made syrup before:

It's not complicated, you just need the right tools and, for this syrup, just three ingredients.

Strawberry lemon syrup recipe

You'll make about 0.8 to 1 litre of syrup - it always depends a little on how much juice the fruit makes.

  • 1.5 kilos of strawberries
  • the juice of 4-5 limes
  • 300 grams of sugar

Clean the strawberries, remove the stalks and leaves and cut into small cubes.
Put the strawberries in a bowl with 100 grams of sugar and mix well. Cover this with a cloth or plate and leave to stand for at least 2 hours.

Place the contents of the bowl with the lime juice in a saucepan and simmer for a few minutes.
(Be careful, if the contents boil, they may squirt)

Now place a clean tea towel (or muslin for syrup making) in a large colander and set this over a large salad bowl.
Pour the strawberry mixture into the tea towel in the colander, fold it over (very tightly) and place a plate with two or three tins of preserves on it. Leave it to rest overnight.

The next day, pour the juice into a saucepan, add the 200 grams of sugar and cook everything again. In the meantime, rinse your glass bottles with very hot water.

The next day, pour the juice into a saucepan, add the 200 grams of sugar and cook again.

With a tablespoon, remove the foam on the surface and fill the hot syrup into the bottles using a funnel.

Store strawberry syrup in the fridge.
If unopened, it will keep for about 8 weeks. As soon as the bottle is opened, the syrup will keep for another 2 to 3 weeks.

Storage is why I always use small bottles. This way, I have 2.5dl of syrup that is opened and quickly used and little, afterwards open a new bottle.

Labels like these are customisable and easy to make. With the free online programme www.picmonkey.com for example. Make your label, print it on self-adhesive paper, cut it out - done.

I wish you lots of fun with syrup making & a wonderful start to summer!
