Erythritol
Erythritol is a white, odorless, crystalline sugar substitute of high purity. It occurs naturally in a wide variety of foods, including fruits and mushrooms, as well as in fermented products such as wine, beer and soy sauce. It tastes virtually the same as granulated sugar, and its sweetening power is 70%.

  • The digestive properties of erythritol are unique. It is easily absorbed in the small intestine and excreted unchanged. Only about 5% of the actual caloric value of erythritol is released into the body. These digestive properties lead to the extremely low calorie value.
  • It does not generate cavities and its glycemic index is zero. Thanks to its high digestive tolerance, it very rarely has a laxative effect.
  • Erythritol is a new type of sweetener with zero calories. Chemically, it is a sugar alcohol with four carbons (polyols) and is obtained by enzyme conversion. It is a natural sugar substitute.

Properties
Natural sweet taste, 70% of the sweetness of granulated sugar, no calories, glycemic index zero, high digestion tolerance / almost no elimination properties, not caries-promoting, cooling effect when dissolved in the mouth, compatible with other sweeteners, heat resistant up to 180°C, no Maillard reaction (browning), reduces the freezing point, needs more water in processing (e.g. baking) than granulated sugar, does not caramelize, does not support yeast.
