Due to its exquisite quality, white tea was reserved for emperors and high nobility in China. It offers a mild bouquet and a unique jasmine aroma – a majestic delight.
White tea gets its name from the white, silky fuzz that envelops the young tea buds and is only two percent fermented. This fermentation occurs naturally during the withering process. The highest quality variety, "Yin Zhen" (Silver Needle), is one of the most sought-after and correspondingly expensive white teas, made from only the youngest and most aromatic shoots of the large white tea bush. The harvest takes place only on two or three days each year when the climatic conditions are perfect. It must neither rain nor be windy, as this would harm the sensitive tea. A few weeks later, when the jasmine flowers are available, they are carefully hand-mixed with the tea to infuse it with flavor. A few days later, the flowers are painstakingly sorted out by hand, leaving behind a wonderfully floral jasmine scent.

Preparation
White teas should be brewed at a water temperature of 80–85°C (let the water sit for about a minute after boiling in the kettle).
