White pepper from the Penja Valley in Cameroon is the centerpiece of the Paragon White Penja Pepper. From picking to washing, drying, and sorting, the process is meticulous. The volcanic soil of Penja gives the white pepper distinctive notes of menthol and camphor, which are evident in the Paragon White Penja Pepper. There are also noticeable hints of horsehair.

The White Penja Pepper is produced using two methods. In the infusion process, raw pepper is macerated in alcohol and water for one to three weeks. The mixture is then filtered to allow it to be infused with other ingredients. An exceptional method used is the gentle CO₂ extraction. Carbon dioxide, compressed under high pressure, penetrates the ingredients and absorbs their flavors. These flavors are released when the pressure is reduced. Additionally, Monin uses natural gluconic acid from Oku honey in Cameroon, which ensures long-lasting flavors without altering the taste.
