Curry powder is a spice blend (hence its Indian name Masala, which means "mix"), the composition of which depends on the creativity of the person who mixes it. Everyone has their own recipe, which generally remains a secret. Therefore, there are infinitely many different variations.
Curry powder consists of many ingredients: cardamom, star anise, cinnamon, cumin, coriander, cloves, pepper, mustard seeds, chili, allspice, turmeric, fenugreek, ginger, poppy seeds, saffron, nutmeg, almond, coconut, and more. Whole spices are carefully selected, then they are roasted before being ground or processed into a colored paste (while in Western countries powder is preferred, in Asia a paste is often used).
Madras curry is particularly suited for savory dishes: it adds a spicy note to red or white meat, fish, rice, and sauces.
