In Greek mythology, Panakeia is the daughter of Asclepius, the god of medicine. Panakeia means "heals all." Sage has always been regarded as a "cure-all" and is highly valued by people. The name comes from the Latin "salvare," which means salvation. The name recalls a story from the Bible in which Mary and the baby Jesus hid behind blooming sage during the massacre ordered by Herod and were thus saved.

Today, sage is primarily used for seasoning. Its flavor is strong and slightly bitter. It pairs well with pork and poultry. In Languedoc, and later in Provence, "Aïga bolhida" was prepared, a soup made with garlic, sage, herbs from Provence, and sometimes eggs. An Occitan proverb states: "Aïga bolhida salva la vida," boiled water saves lives.
