Arab doctors were already using dandelion 1,000 years ago. The plant has not been known in our part of the world for as long. There is no evidence of dandelion being used as a food or for medicinal purposes before the end of the 15th century. Dandelion undoubtedly came to us in the course of the barbarian invasion. The name of the plant refers to the shape of its leaves, which are reminiscent of lions' fangs.
In France, dandelion leaves are used to make salads in spring and the root is used to make an infusion. In the past, Taraxacum (botanical name of the dandelion) was also used to treat eye complaints (taraxis = Greek for eye complaint). Nowadays, the milky juice of the dandelion is no longer used to treat the eyes.
