Hojicha is made from Bancha leaves (late harvest) that are roasted in the oven for a long time. The only Japanese green tea with a brown color that releases a woody but light flavor. As a thirst quencher, it is traditionally served at the end of meals and even in the evening, as it has a very low theine content.
