Hojicha is made from bancha leaves (late harvest), which are roasted in the oven for a long time. It is the only Japanese green tea with a brown colour, releasing a woody but light flavour. As a thirst quencher, it is traditionally served at the end of meals and even in the evening, as it has a very low theine content.
