Matcha is a special form of green tea. Buddhist monks discovered matcha more than 800 years ago as a meditation drink after the powder found its way to Japan from China. In the final weeks of their growth, the matcha plants are covered with dark mats, allowing a maximum of 15% of sunlight to reach the plants, which promotes the formation of chlorophyll. This also gives the leaves their vibrant green color; the more chlorophyll they contain, the more nutritious the tea is. As the leaves are picked and steamed by hand, all the valuable ingredients are retained. After harvesting, the matcha leaves are ground into a fine, grass-green powder using handmade granite stone mills. In contrast to cheap tea productions, the stems and veins of the tea leaf are not used in the production of matcha tea.
In addition to chlorophyll, matcha also contains caffeine. The caffeine content of matcha is comparable to that of an espresso and can keep you going for between four and six hours. The acid contained in coffee can upset some people's stomachs and lead to heartburn, but matcha is known for being well tolerated.
