Pharaoh's treasure! The ancient Egyptians already used it as a spice, remedy, and for embalming. It is rich in vitamins A, B1, B2, B3, B5, and D, as well as iron and phosphorus. Its characteristic aroma is reminiscent of curry, and in sprouted form, it pairs wonderfully with noodle and rice dishes. The sprouting time is 2-4 days with a prior soaking time of 6-8 hours, keeping in mind that the sprouts develop more bitter compounds the longer they sprout. It sprouts best in a sprouting jar. It is also excellent whole for seasoning curries and other Indian dishes; just briefly roast it in a pan beforehand. Storage: Store in a cool, dry place away from heat.
