Cutting chicory for successive sowings from March to August. The red rosettes of the popular Cicorino rosso form after the wintering of late summer sowings.
From March to June, it is used as cutting chicory, and from July to August, it is harvested as rosette chicory for the spring harvest; sow in rows 20 cm apart and cover with 2 cm of soil.
Loosen the soil, water, and keep weed-free. Cut when the plants reach a height of 15-20 cm. If rosettes are desired, thin the plants to 5-8 cm apart and allow the leaves to grow. In winter, the foliage will freeze, and in spring, beautiful rosettes will emerge for a crisp salad. If it tastes too bitter, chop finely and soak briefly in cold water.
