Mung beans, or green soybeans, known as soybean sprouts, produce crunchy, juicy sprouts due to their high moisture content (almost 90%, comparable to any fruit).

Their refreshing, slightly sweet flavor makes them a great addition to salads and spicy grain dishes. The health benefits of mung bean sprouts lie in their high vitamin content (A, B1, B2, C, E). In particular, the vitamin E content increases dramatically during the germination process. Enzymes and choline are also abundant. To grow them, you will need a sprouting jar. You can harvest your mung beans as early as the 3rd day.
