Broccoli seeds are characterized by a high content of the antioxidant sulforaphane, a health-beneficial glucosinolate. This compound activates the production of protective enzymes against harmful DNA changes and inflammation, strengthens the body's defense against free oxygen radicals, and reduces the number of Helicobacter pylori bacteria, which can cause stomach ulcers and malignant growths. The analysis of this broccoli seed variety (Brassica rapa sylvestris) revealed a sulforaphane content of over 1500 mg/100 g. Thus, these broccoli sprouts contain up to 100 times more sulforaphane compared to mature vegetables. Additionally, the sulforaphane in sprouts can be better absorbed by the body than through the consumption of vegetables. Broccoli sprouts also have anti-anemic, anti-scurvy, diuretic, deworming, and cleansing effects, and they have been shown to inhibit tumor formation. However, you should soak them for 8 hours beforehand. Since the sprouts are relatively small, they tend to clump together in the sprouting jar. To untangle them, you can either place them in a bowl of water or mix them with other seeds when setting them up. Broccoli sprouts also grow excellently on a cress sieve, provided you adhere to the 8-hour soaking time. Additionally, ensure that the seeds do not dry out, as broccoli seed is not mucilaginous and tends to dry out more quickly.
