Red quinoa is a special type of quinoa and is only grown in small quantities in the high plateaus of the Andes. Quinoa and amaranth have been cultivated there for over 6000 years. Hardly any other plant species thrives in the high altitudes of the Andes, which is why quinoa is the main source of income for people in the Andean regions alongside amaranth. Quinoa is partly harvested by hand. The plants are separated with a sickle and placed in bundles to dry.
Use: This special red quinoa is characterised by its very aromatic flavour. This flavour goes particularly well with dishes with walnuts or vegan cheese specialities. The red grains retain their expressive colour during preparation and cook up loose and grainy. Red quinoa can be prepared as a delicious side dish, a creative salad or an unusual stir-fry.
