Excellent bell peppers with a fruity flavor, not too spicy when consumed fresh. When cooked, the peppers become much spicier. This pepper gets its name from its bishop's hat shape. To have chili peppers available year-round, you can choose between different storage methods.
Drying: Thread the chili peppers onto their stems using a sewing thread and a needle with a fairly large eye. Form a chain about 30 cm long and hang it in a shady, dry place. After about 20 days, the chili peppers will be completely dried and can be stored whole or crushed in jars. After drying, they can also be preserved in jars under oil, using a ratio of ¼ coarsely chopped chili peppers to ¾ extra-fine olive oil. Let them sit for at least a month so that the oil can absorb the full flavor.
In salt: Take a wide-mouthed jar and pour fine salt into the bottom. Now create layers of whole, fresh chili peppers and salt until the jar is full.
Freezing: Place the fresh chili peppers in freezer-safe plastic bags, remove the air, and seal them.
