The pods should be harvested when fully ripe, which is when they turn orange. They are suitable for pot cultivation, but can also be grown in the garden alongside other varieties. They are at their best starting in September. To have chili peppers available throughout the year, you can choose from various storage methods.
Drying: Thread the chili peppers onto their stems using a sewing thread and a needle with a relatively large eye. Create a chain about 30 cm long and hang it in a shady, dry place. After about 20 days, the chili peppers will be fully dried and can be stored whole or crushed in jars. After drying, they can also be preserved in jars under oil, maintaining a ratio of ¼ coarsely chopped chili peppers to ¾ extra-fine olive oil. Let them sit for at least a month so that the oil can absorb the full aroma.
In salt: Take a jar with a wide base and pour fine salt into the bottom. Now create layers of whole, fresh chili peppers and salt until the jar is full.
Freezing: Place the fresh chili peppers in freezer-safe plastic bags, remove the air, and seal them.
