Prices are based on supply and demand, suppliers and availability of goods. For all these reasons, they vary regularly.
I measure the pedal to saddle height here at approx. 95cm

I think 1.55 is the minimum height, but depending on your reach, the steering wheel grip could get a bit cumbersome!

Unfortunately, the spare part is not available in our online shop. It is best to contact the third-party supplier directly.
The item can currently be ordered and the expected delivery time is between Wed 13.7 and Fri 15.7 (no guarantee).
The cadence is shown on the display. The value can also be transmitted to apps or other interfaces. The accuracy is high. Note: The watt value must also be calibrated for the 2021 model. After calibration, the wattage is also correct, e.g. with Zwift.
Apparently there is a competing product that also bears the designation IC8. Schwinn obviously wanted to avoid confusion. I read that somewhere on the internet, but I can't remember the source.
A watt display is not available.
The bike can be coupled with Zwift. That is something similar. I am not familiar with Peloton

Are you sure that the trainer is compatible with Rouvy? I couldn't find the IC8 under the compatibility list:

The pedals supplied are already SPD-compatible, but a "hybrid solution" of normal pedals with straps and cleats.
However, you can easily retrofit the current Shimano models.

Hey, that shouldn't really be a problem. I have connected Zwift and a Garmin chest strap at the same time and it works. But I can't promise you whether it works with the watch.
