Good question. It doesn't have a normal non-stick coating, it is indeed baked on. And when it's hot (and it gets very hot, including the rim) and you put something in it without fat, it sticks. After cleaning, it has typical patterns from the heat. It is highly recommended. For all heat sources except the oven (wooden handle). And not just for Asian dishes. Meat, vegetables, potatoes, rice, even risotto.
