Hello, I have two questions: 1. is the handle on the lid made of plastic? and 2. why is the maximum temperature resistance "only" 250 °C?

The handle on the lid is made of steel. According to the manufacturer: "All lid knobs are made of brass or nickel-plated stainless steel and are heat-resistant up to 250°C."
In other words, the temperature resistance of this model refers only to the lid handle. On my model, the handle discoloured slightly at a temperature above 250°C, but otherwise I could not observe any significant changes/damage.
