STH7060/81 > GC362/81 because:
More power, therefore faster to operating temperature.
Higher steam output rate for better ironing performance.
Foldable, so that the appliance fits straight into the case and is not bent.
Larger tank(s).
StyleMat included, so it can be used on any surface.

As I don't know the steam&go, I can't answer this question.
The STH7060/81 really convinces me. Even with heavily creased jeans, the creases disappear with ease.
It can also be filled with normal tap water and has a Swiss plug.
