The Yaxell YPSILON Santoku knife from the SUPER GOU 193 series, with its dynamic, typically Japanese shape, features a rust-free blade constructed from 193 layers and a handle made of black linen micarta, making it a reliable partner in the kitchen. The core is made of SG-2 high-performance steel, with 96 layers of rust-free carbon steel applied to each side of the blade, resulting in an extraordinary Damascus appearance with a Rockwell hardness of 63 degrees. The black linen micarta handle is adorned with an elegant mosaic pin and red accents as inlays. A satin-finished 18/10 stainless steel end cap provides additional stability. Included in the delivery is a maple wood sheath.
