With its extraordinary blade shape, rooted in Japanese cuisine, and the blade finish, the Kiritsuke knife model from the Yaxell GOU 101 series is a standout. The combination of noble shine, fine Damascus pattern, 100 layers of stainless steel on a core layer of rust-resistant SG 2 steel, and black linen micarta with a stainless steel cap has been masterfully executed.

The blade has a Rockwell hardness of 63 degrees, and the engraved characters for the word GOU = excellent, which are placed on the end cap of the handle, rightfully adorn this knife.
