With the Windmühlenmesser "BrotBeidhänder" K-B2, Herder offers a fantastic knife for both right- and left-handed users. Thanks to the hand-polished double-sided serrated edge, both right- and left-handed individuals can handle it equally well. The knife maintains its cutting alignment, allowing bread, whether hard or soft, to be sliced easily and smoothly. The 225 mm long blade of this Windmühlenmesser bread saw is made from stainless chromium-molybdenum-vanadium steel, hand-ground (special fine grinding), and manufactured according to the "Solingen thin grind" principle. It is hardened to 60 HRC, which gives it excellent cutting properties. The oval, curved handle made from beautifully twisted, very hard walnut root wood has a balanced feel, sits comfortably in the hand, and allows for fatigue-free work. Windmühlenmesser knives should not be cleaned in the dishwasher; the handle should be oiled occasionally with Herder wood care oil.
