The professional Santoku knife with a pakkawood handle has a total length of 30.00 cm and a blade length of 16.00 cm. Thanks to the damask steel, made from 67 layers with a VG10 core, a blade hardness of 60±2 HRC is achieved. This professional kitchen knife is and remains extra sharp.
