The Kai Shun knife is a typical Damascus knife in black and silver colors. With a 32-layer construction made of stainless Damascus steel and a VG-MAX steel core, it guarantees sharpness and cutting durability. The blade is both hard and elastic, double-edged, allowing for clean, precise cuts. The blade length of 20 cm has a Rockwell hardness of approximately 58 HRC. The symmetrical plastic handle is suitable for both left- and right-handed users and provides stability and balance while cutting with its full tang design. A special detail is the engraving of Tim Mälzer's bull head at the end of the handle, the trademark of the professional chef.
