The sashimi knife or yanagiba is the classic filleting or carving knife for meat or raw fish, also known as a sushi knife. In the traditional Japanese design, it is slim and tapered, ideal for filleting and cutting into wafer-thin and fine slices. The Shogun Sashimi M-505 is hand-forged in the Japanese manufactory using traditional production methods from high-purity knife steel of the highest quality. The V-Gold No. 1 cutting edge layer is embedded between 4 layers of soft stainless steel. The blade is ground on both sides, rust-resistant and has a very attractive finish. The traditional handle is made of high-quality rosewood. The knife is supplied in a coloured gift box.
