The Lignum 3 Santoku knife from Robert Herder has an overall length of 29.5 cm and a blade length of 17 cm, made from non-stainless carbon steel. The blade has a hardness of 60 HRC and is extremely sharp thanks to the Solingen thin grind and the blue-plated finish. The knife is sharpened on both sides, providing precise cutting capabilities. The plum wood handle, with its natural color variations making each piece unique, feels comfortable in the hand. It is important to note that the knife should be cleaned by hand. It is not suitable for chopping very hard foods and should only be used on soft cutting boards made of wood or plastic.
