Opinel No 09 Oyster knife

Opening oysters requires strength and skill. The Opinel oyster knife, specially designed for this purpose, proves to be a good helper. It is based on a size 9 handle, in this case made from lacquered padouk wood. In addition to its attractive appearance, this also offers good protection against the ingress of moisture. The real highlight, however, is the blade, which is only 6.5 cm long but 2.2 mm thick and made from modified Sandvik 12C27 stainless steel, specially produced for opening oysters. It should be noted that the blade is only sharpened at the tip by around 1.5 cm to release the oyster's sphincter muscle. The rest of the blade is blunt and can therefore be used as a lever for opening. As a genuine Opinel, this model also has the well-known Virobloc lock, which reliably locks the opened knife.
