The Superstone Set includes, in addition to the holder, four sharpening stones from Naniwa's Japanese Super Stone series with grits of 1000, 400, 5000, and 10000. With this Superstone Set, any dull knife can be restored to its former glory. The stones in the Superstone Set are intended for the following sharpening processes: Super Stone 1000: restoring the basic edge, Super Stone 400: coarse sharpening, Super Stone 5000: fine sharpening, Super Stone 10000: fine polishing.
Before use, the sharpening stone should be fully submerged in water for about 5 to 10 minutes. There should always be a light film of water on the surface of the sharpening stone while sharpening. For knives that are ground on one side, first place the ground side on the sharpening stone. Please ensure that you maintain the factory-set angle. Now, sharpen the knife with pressure towards the edge at an angle of 45° to the sharpening stone (to achieve a larger contact area), and release the pressure when moving the knife away from the edge. This process should be repeated in the same number of strokes as before.
After sharpening the knife on the ground side, lay it flat on the hollow ground side and repeat the sharpening process as described above, but only about 1/10 as many times as you sharpened the opposite side. For knives that are ground on both sides, perform the sharpening process as with the one-sided knives, but you must maintain a sharpening angle of about 15°. It is important to sharpen both sides evenly to achieve a symmetrically sharpened blade again.
