The Super Stone 5000 from Naniwa is a Japanese sharpening stone with a grit of 5000. It is excellent for fine-tuning European and Japanese knives. With a thickness of 1 cm, the Super Stone 5000 is resin-bonded, making it very hard and ensuring slow wear. The knife leaves almost no marks on the sharpening stone. A few drops of water are sufficient to start sharpening. For very dull knives, it is recommended to first perform the basic sharpening on a coarse stone, such as the Super Stone 1000.

Before use, the sharpening stone should be fully submerged in water for about 5 to 10 minutes. During sharpening, a light film of water should always be present on the surface of the stone.

For knives sharpened on one side, place the sharpened side down on the stone first. Be sure to maintain the factory-set angle. Sharpen at an angle of about 45° to the stone to achieve a larger contact area. Apply pressure towards the edge and release the pressure when moving the knife away from the edge. Repeat this process the same number of times. After sharpening the ground side, lay the knife flat on the hollow ground side and repeat the sharpening process, but only about 1/10 as often as on the opposite side.

For knives sharpened on both sides, perform the sharpening process as with one-sided knives, but maintain a sharpening angle of about 15°. It is important to sharpen both sides evenly to achieve a symmetrically sharpened blade.
