Description This professional sharpening set leaves nothing to be desired. The professional sharpening set is suitable for the proper resharpening of Japanese and European blades without a serrated edge. The professional sharpening set includes the following tools: an electric sharpening device with a polishing unit from KAI, a leather strop with four different surfaces from Nesmuk, a Naniwa Superstone with a 1000-grit, and a Superstone holder. A detailed guide on how to use the tools can be seen in the following video: Knife Sharpening. The sharpening stone should be completely submerged in water for about five to ten minutes before use. There should always be a light film of water on the surface of the sharpening stone while sharpening. For knives that are sharpened on one side, first place the sharpened side on the sharpening stone. Please ensure that you maintain the factory-set angle. Now, sharpen the knife with pressure towards the edge at an angle of 45° to the sharpening stone (to achieve a larger contact area) and release the pressure when moving the knife away from the edge. This process should be repeated in the same number of strokes. After sharpening the knife on the sharpened side, lay it flat on the hollow-ground side and repeat the sharpening process as described above, but only about 1/10 as often as you sharpened the knife on the opposite side. For knives that are sharpened on both sides, perform the sharpening process as with one-sided knives, but you must maintain a sharpening angle of about 15°. It is important to sharpen both sides evenly so that you achieve a symmetrically sharpened blade again.
