The 13 cm long knife has a very special appearance due to the grain of the blade. The shimmering floral pattern is unique to each knife and is a characteristic feature of Damascus steel. A similar grain is also found in the handle made of smoothly polished "Black Ash" wood, into which the blade merges smoothly and seamlessly. Here, a logo pin in mosaic design is embedded as a special eye-catcher. The noble end cap forms the end of the handle. The Shotoh knife is particularly suitable for peeling and slicing vegetables and fruit.
The CRYODOR® blade of this damask knife is made of 133 fine layers in total. They nestle around the core of the blade, which consists of MicroCarbide powder steel MC66. A special hardening process is used to achieve a blade hardness of 66 Rockwell in its manufacture. This means that the knife promises particular stability and edge retention. It gets its special sharpness from the proven Honbazuke trigger. In this traditional Japanese process, the blade is ground and polished in three different ways on both sides. To ensure that the knife glides quickly and precisely through the material to be cut in all cutting techniques and to prevent hand fatigue, the handle is manufactured in the proven D-shape. It also features a good balance between handle and blade. The noble and sharp damask knife Shotoh from the MIYABI 5000MCD 67 series makes cooking a special experience.
The blade consists of 133 layers with a core of special powder steel MC66 (MicroCarbide), enabling a blade hardness of up to 66 Rockwell. CRYODUR® ice-hardened blades are particularly cutting edge-holding and have excellent blade flexibility. The authentic Japanese blade profile, sharpened on both sides with a Honbazuke trigger, provides enormous sharpness. The handle, made of unique "Black Ash" wood in a traditional "D" shape, offers balance, optimum control, and fatigue-free cutting.
