The blade of the Santoku knife is 18 cm long and is made from a steel consisting of 133 layers. This forms the basis for the so-called Flower-Damascus pattern, which is unique to each knife. The core layer is made of MC66 steel. Each blade undergoes a hardening process that allows the Santoku knife to achieve a hardness of approximately 66 HRC. Thanks to the double-beveled blade and the Honbazuke sharpening, you benefit from exceptional edge retention.
The handle of the Miyabi knife is made from "Black Ash" wood and features an elegant end cap. It is designed in the typical Japanese "D" shape, which provides a stable grip. The wooden handle visually contrasts with the shimmering steel of the blade. With this Santoku knife, you have a durable and sharp knife that you can use in the kitchen on many occasions.
The blade consists of 133 layers with a core made of special MC 66 (MicroCarbide) powder steel, allowing for a blade hardness of up to 66 Rockwell. CRYODUR® ice-hardened blades are particularly edge-retaining and offer excellent blade flexibility. The authentically Japanese blade profile and the double-beveled blade with Honbazuke sharpening ensure exceptional sharpness. The handle made of unique "Black Ash" wood in a traditional "D" shape provides balanced weight, optimal control, and fatigue-free cutting.
