Additionally, glazed ceramic is completely scratch and cut resistant and conducts heat from your food significantly slower than aluminum. Please note: To bake a cake base that you want to remove from the pan afterward, first grease the pan with butter and then dust the butter layer with flour. Avoid temperature shocks, as the pan could otherwise break (for example, if you place the pan directly from the hot oven onto a cold stone countertop).
