Recipe
Ingredients:
100 g butter
75 g white chocolate
100 g brown sugar
2 eggs
75 g flour
2 tsp powdered sugar
1 pinch of salt
400 g couverture

Step 1: Slowly melt the butter and chocolate over a water bath.
Step 2: Whisk the brown sugar and eggs until smooth, then add the butter-chocolate mixture. Mix well.
Step 3: Combine the flour, powdered sugar, and pinch of salt, then stir into the mixture.
Step 4: Evenly fill each mold halfway with the batter (best done with a piping bag).
Step 5: Bake the mini cakes in a preheated oven at 180 degrees Celsius (top/bottom heat) for about 15 minutes. Let the cakes cool in the mold for about 5 minutes after baking, then turn them out.
Step 6: While the mini cakes cool, melt the couverture over a water bath.
Step 7: Remove the cakes from the mold, ensuring they can be placed back in the mold in the correct order. Trim any overhanging parts with a bread knife and level the bottom.
Step 8: Pour the melted couverture into the clean and dry mold and gently press the cakes back into the mold in the correct order.
Step 9: Pour some couverture over the cakes and smooth it out.
Step 10: Place everything in the refrigerator for about 1 hour. Once the couverture has set, the cakes can be carefully removed from the mold.
