This handcrafted knife features a blade length of 90 mm and is made from high-quality AUS-10 Japanese stainless steel, known for its exceptional sharpness and durability. The blade has a hardness rating of HRC 61 +/-1, meaning it retains its razor-sharp edge even after repeated use.

The knife is distinguished by its versatility and is specifically designed for precise, board-independent cutting tasks. It is primarily used for peeling fruits and vegetables, but its precision also makes it ideal for other fine cutting tasks in the kitchen.
