A springform allows you to release the side wall using a tension lever: the ring opens, and you can remove the bottom of the mold and reattach it. With a flat base, cakes and tart bases can be easily baked in the springform. The base with a central chimney replaces a bundt pan for pound cakes and gugelhupf. Unlike other baking pans, the finished cake is not inverted out of the springform. Instead, you release the tension lever – the cake separates on its own thanks to the non-stick coating – and lift the ring away. Since the bottom support plate is slightly larger than the ring, springform pans are completely leak-proof. They come in various sizes and shapes, such as round, square, or heart-shaped.
