Kai Shun Nagare

The Santoku is the Japanese counterpart to the European chef's knife. Translated, Santoku means "three virtues" and can be used for fish, meat, and vegetables. Visually, the Santoku resembles a cleaver, but it is not suitable for chopping. Its high, stout blade is double-edged and is excellent for handling bulky cutting tasks like vegetables. The wide blade also makes it easy to transfer the cut ingredients into a pot or bowl. With its elegant design, special material properties, and a technically complex manufacturing process, this knife series belongs to the absolute luxury class. The highly polished blades feature an intricately designed, radiating pattern of Damascus layers. This appearance, combined with the gray-black marbled handle, creates an impressive overall look. The blades of the series are made from two different types of steel, which are fused into a 72-layer Damascus steel. The elaborate layering of the two types of steel results in a blade with exceptionally durable cutting performance. The series was awarded a Special Mention at the German Design Award 2017.
