Kai Shun

The SHUN ham knife is forged from 32-layer VG-10 Damascus steel. This is not only corrosion-resistant, but also gives the blade just the right combination. This gives the blade a hardness of around 61 HRC. The smooth, double-sided grind helps you to thin the ham precisely.
The ham knife is also suitable for fish, vegetables and fruit. For example, fish can be filleted precisely, vegetables portioned and large fruits cut up.

The KAI knife has a 12.2 cm long handle made of processed Pakka wood with resin. The SHUN CLASSIC gets its optimum grip from the chestnut shape typical of Japanese knives. The handle elegantly combines the feel of wood with the durability of plastic. The latter is particularly effective in terms of robustness and improved resistance to moisture. The guidance of the knife and its balance is stabilised by the continuous tang.
