The anniversary knife with its impressive Kiritsuke blade shape and matte handle is limited to just 5,555 pieces worldwide and features an individual serial number engraved on the bolster. The Kai Shun Premier Kiritsuke 13 is presented as the Lucky Number 13, as the number 13 is considered a lucky number in Japan.

The 15.0 cm long blade showcases the unmistakable hammered finish of the Shun Premier Tim Mälzer series. Additionally, the blade is adorned with the exclusive Edition XI logo and Tim Mälzer's signature.

In Japan, experienced chefs receive the Kiritsuke-shaped knife after mastering all cutting techniques as a symbol of extensive expertise. Similar to the Santoku, this traditional blade shape is equally suitable for preparing vegetables, fish, or meat. The tapered blade allows for not only paring, portioning, and slicing but also filleting.
