Product details

This CJH carving knife impresses with its blade shape. The slight flexibility of the blade enables it to be released from the bone and is also an advantage for subsequent carving and serving. Made from 67-layer Damascus steel with a core layer of VG10 steel, the blade has a hardness of 60 HRC for impressive edge retention. The Japanese Hokkaku handle shape made of attractive walnut wood, which stands for ergonomics and safe handling, should be emphasised. These first-class chef's knives are supplied in elegant black gift packaging.
