The Giesser filleting knife is ideal for the food industry and gastronomy. Equipped with an 18 cm long blade made of chrome-molybdenum steel (X55CrMo14), the knife impresses with its thin and flexible blade, which is perfect for filleting fish and meat. The hardness level of 56 to 57 HRC ensures long-lasting cutting performance. The smooth blade grind guarantees precise cuts, while the non-slip handle made of thermoplastic rubber (TPE) provides safety and comfort. The knife is dishwasher safe and rust-free.
