The Dynasty series uses 9CR18MOV, a great steel for every chef's everyday use. With an HRC of 60 +/- 2, the blade takes an angled edge and holds it long enough to extend the life of your knife (with general maintenance). This blade is ideal for vegetables, fruit, fish and meat. Please do not cut frozen products as this can affect the knife edge. The Dynasty series is made from African rosewood and is a great compliment to the beauty and comfort of the knife user. The stability of the handle allows the user to fully manipulate the blade, enabling effective use for precision and endurance cutting. The balance point runs across the heel to spool the billet. This allows the user a comfortable grip with precise cuts and less wear and tear on the hands. The weight is directed towards the knife blade, allowing for efficient use during the stone chopping motion. The Santoku knives in the Design Dynasty series are designed to showcase the beauty of Eastern Santoku knives while focusing on comfort and efficiency for the everyday cook. The blade length is 18.4 cm and the handle length is 15.3 cm with an overall length of 33.7 cm. When a clamp handle is used, the blade length is considered a "true 7 inches", with the user able to maximise the manoeuvrability of the blade edge.
