Product details

The Santoku knife is an all-purpose knife in a traditional Japanese shape, primarily found in the kitchen, and has similar characteristics to a chef's knife.

The smooth edge ensures a clean cut without fraying. Knives with a smooth edge are used for cutting both hard and soft ingredients.

The blade is made from the alloy X 50 Cr Mo V15. Each individual component has a specific function: chromium for wear resistance, molybdenum for corrosion resistance, and carbon for strength.

The handle made of polyoxymethylene (POM) offers high working strength as well as extreme hardness with relatively low temperature sensitivity up to about 110°C. It also has good chemical resistance.

56° Rockwell (HRC) is the perfect compromise between long-lasting sharpness and easy re-sharpening.
