The Nordic Kitchen knives are designed and crafted based on Japanese principles. The blades are made from 67-layer Japanese Damascus steel (AUS 10), and the edges are sharpened on both sides at a Japanese angle of 13–15°. This provides them with maximum sharpness without compromising the flexibility of the blades. Thanks to a narrow spine, ingredients can be easily cut, but it is advisable to avoid frozen goods and bones. The knife handle is ergonomically shaped, and the bolster is designed as a thumb rest, allowing for more precise movement and greater pressure application. Additionally, the top edge of the blade is rounded. With a hardness rating of 60, the knives are highly wear-resistant. The vegetable knife is specifically designed for chopping and slicing vegetables, particularly hard varieties. With its extremely sharp blade, the knife offers excellent cutting properties, enabling easy, safe, and very precise slicing, dicing, or julienning. When working on a cutting board, the knife handle sits securely and comfortably in the hand.
