Product details

The tournier knife, also known as a peeling knife, features a short blade that allows for quick cutting and peeling of fruits and vegetables. The inwardly curved blade enables cutting with minimal waste.

The smooth edge ensures a clean, even cut without fraying. Knives with a smooth edge are used for cutting both hard and soft food items.

The blade is made from the alloy X 55 Cr Mo V14. Each individual component serves a specific purpose: chromium provides wear resistance, molybdenum offers corrosion resistance, and carbon contributes to strength.

The handle made of PP/TPE is very hard and resistant to heat and acids. Additionally, it fits comfortably in the hand, allowing for fatigue-free work.

A hardness of 56° Rockwell (HRC) strikes the perfect balance between long-lasting sharpness and easy re-sharpening.
