Culilux Kobe N63 Santoku Knife 18 cm

The result of the search for the perfect knife. Developed by the authors of Knifeopedia, it combines the best of two knife worlds (German and Japanese). Made from one of the best knife steels, perfectly heat-treated, with an extremely thin and sharp blade geometry, a four-stage honed edge, perfectly balanced and ergonomic.

Ground to about 10° per side instead of the usual 15-20°, it achieves a sharpness score of under 150, equivalent to that of a razor blade. Each individual knife is tested and receives a personalized sharpness certificate. Together with the polished blade and special thin grind, the knife glides effortlessly through the cutting material.

The Swedish 14C28N high-carbon stainless steel, designed for razor blades, is brought to a hardness of 62 Rockwell through a specially developed vacuum heat treatment and cooled in liquid nitrogen using the CRYOMAX process. As a result, the edge stays sharp significantly longer.
