Developed by the authors of the Knifeopedia, this knife combines the best of two knife worlds (German and Japanese). It is made from one of the finest knife steels, perfectly heat-treated, and features an extremely thin and sharp blade geometry with a four-stage honed edge. The knife is perfectly balanced and ergonomically designed.
Ground to about 10° on each side, instead of the usual 15-20°, it achieves a sharpness score of under 150, which is equivalent to that of a razor blade. Each individual knife is tested and comes with a unique sharpness certificate. Along with the polished blade and special thin grind, the knife glides effortlessly through the cutting material.
The Swedish 14C28N high-carbon stainless steel, developed for razor blades, is brought to a hardness of 62 Rockwell through a specially designed vacuum heat treatment followed by Cryomax deep-freezing in liquid nitrogen. As a result, the blade is highly corrosion-resistant and stays sharp significantly longer.
Outstanding craftsmanship, perfect balance, a smooth transition from the bolster to the blade, and rounded as well as polished edges characterize this knife. The shape-retaining and attractive Micarta handle offers refined ergonomics for comfortable and fatigue-free cutting, even for professionals.
